Birthday Cupcakes

Alexander recently turned one, but due to scheduling conflicts, we won't be having his party for another few weeks.  I have been in the midst of finding the perfect cupcake recipe for the party, and since the theme of the party is "color", I've been looking at vanilla cupcakes. (This way I can add food coloring to the batter to make colorful treats.)

I found this recipe on recipegirl.com:

Ingredients:

1 (18.25 ounce) box white cake mix (I used Duncan Hines French Vanilla)
1 cup all-purpose flour
1 cup granulated white sugar
3/4 teaspoon salt
1 1/3 cups water
2 Tablespoons vegetable or canola oil
1 teaspoon vanilla extract
1 cup sour cream
4 large egg whites

Directions:

1. Preheat oven to 325°F. Place cupcake liners in cupcake pans (you'll need approx. 36).
2. In a large bowl, whisk together cake mix, flour, sugar and salt. Add remaining ingredients and beat with hand mixer for 2 minutes, or until well blended.
3. Use ice cream scoop to fill prepared cupcake tins- fill about 3/4 full. Bake about 18 minutes, or until toothpick inserted in center comes out clean.

To make these cupcakes into colorful cupcakes:

Divide your batter and place into separate bowls. Add enough food coloring to reach desired color. I used Ateco food coloring.
Line your cupcake tin and fill 3/4 full. You can either fill the cupcake with 1 color or used multiple colors.
These cupcakes are perfect for any occasion, just change the food coloring to match. (Easter is right around the corner, hint hint!)
